Vegetarian Nut Roast – Egg Free & Gluten Free

Ingredients – Serve 4

  • 1 tsp virgin olive oil
  • 1/2 organic leek, finely chopped
  • 170g mixed chopped nuts & seeds,
  • 115g cooked brown rice, drained (slightly overcooked)
  • 1 medium grated carrot
  • 55g button mushrooms, finely chopped
  • 2-3 tbsp dark tahini
  • 1 tsp dijon mustard
  • Little water
  • Salt and Pepper to taste


  1. Sauté the leek  in the olive oil.Add the mixed nuts, over cooked brown rice, grated carrot, chopped mushrooms, tahini, and mix well. The mixture should be thick and gooey – if necessary, add a little water.
  2. Add the S&P and spoon into a greased shallow tin, smooth over the top.
  3. Bake at 190C for approx. 30 minutes.
  4. Serve immediately.
