Vegetarian Nut Roast – Egg Free & Gluten Free
Ingredients – Serve 4
- 1 tsp virgin olive oil
- 1/2 organic leek, finely chopped
- 170g mixed chopped nuts & seeds,
- 115g cooked brown rice, drained (slightly overcooked)
- 1 medium grated carrot
- 55g button mushrooms, finely chopped
- 2-3 tbsp dark tahini
- 1 tsp dijon mustard
- Little water
- Salt and Pepper to taste
- Sauté the leek in the olive oil.Add the mixed nuts, over cooked brown rice, grated carrot, chopped mushrooms, tahini, and mix well. The mixture should be thick and gooey – if necessary, add a little water.
- Add the S&P and spoon into a greased shallow tin, smooth over the top.
- Bake at 190C for approx. 30 minutes.
- Serve immediately.
