1 1/2 cups of cooked millet
1/4 tsp sea salt
Pinch black pepper
1/4 grated onion
1/2 grated carrot
1/2 tsp dijon mustard
1 tbls chopped parsley
1/2 tbls of chopped chives
pinch of “herbs de provence”
Cold pressed vegetable oil to fry
Once the millet has cooled down, add all the ingredients apart from the oil and mash together using your hands
With wet hands (keep a bowl of fresh water nearby) take a palm of the mixture and shape into a medium sized burger about 1 cm thick. The above mixture should make 4 burgers.
In a large frying pan use enough of the oil to cover the bottom and warm up to a medium heat
Fry the burgers for approx. 4 minutes on each side or until they are golden brown. Place on a kitchen paper to drain the oil before serving. I usually take a tahini dressing and a mixed salad (eg. Cerleriac, apple and walnut) Or I place the burger in a large salad leaf if I want the true healthy burger effect!
