Black Bean Flapjacks

INGREDIENTS:

300g Oats

2 tablespoons virgin coconut oil

2 teaspoons cacao powder

1 x 380g black beans – rinse well before using

125ml maple syrup or honey

Handful of cacao nibs OR chocolate chips

Mix black beans, coconut oil, cacao and maple syrup in your food processor

 

Place bean mix into a bowl together with the oats and cacao nibs. Stir thoroughly

 

Use an ice-cream scoop to create a ball of mixture before putting on to a lined baking tray and squashing down with the palm of your hand to create the flapjack form of your choice.

Bake in the oven for 20 mins at 180degrees.
