Summer brings wonderful berries to turn your breakfast muesli into a taste explosion and an energy burst for the day ahead. Prepare this delicious muesli the night before so all you need to do in the morning is open the fridge, reach for your breakfast jar and Enjoy!
45g Porridge Oats
1/2 grated apple
175ml almond or any plant based milk
1tblsp honey/agarve syrup/date syrup or maple syrup
1/2tblsp Chia seeds
Handful of pumpkin seeds
Handful of sesame seeds
Handful of raisins
40g mixed raspberries and blueberries
Grate the apple and then mix all the ingredients in a bowl so the liquid is well absorbed. Place in a glass jar (an old honey or jam jar will do) and secure the lid. Place in the fridge. If you make double the quantity you can enjoy 2 days in a row. Sometimes I mix with some yoghurt (coconut, soya or oat) for extra creaminess and then top with more berries in the morning!
